Here’s a post about one of my favorite foods: Soybeans!
Soy beans have many nutritional benefits and are high in protein and fiber. They play quite a significant role in my normal diet. Since I’m lactose-intolerant, I frequently turn to soy milk for my cereals. I’m also a big fan of tofu and it’s many forms. Fermented soy beans (natto) is great with rice. Green soybeans (edamame) makes a fun snack. Shelled edamame are great tossed in salads, added to stir fries, or turned into dipped. I’ve purchased soybeans in so many forms, but never tried preparing whole dried soybeans. This time I decided to buy a bag of dried soybeans and cook up a large batch of soybeans. Some of it will be stored in the freezer for future use and the rest will be turned into soy nuts (roasted soybeans) for snacking!
Dried soybeans can be purchased and stored in an air-tight container in a cool, dry place for up to a year. (Dried soybeans are available online at MySpiceSage.) There’s some preparation to it before you can use it for anything, but it’s not that complicated at all.
Rinse the dried soybeans and drain. For every 1 cup of dry soybeans, add about 3 cups of water. Here’s two methods for soaking:
Overnight (8+ hours):
Soak overnight in the refrigerator. Drain and rinse.
Quick (about 1 hour):
In a large pot, bring the soybeans and water to a boil. Let it simmer for a couple of minutes. Remove it from the heat and let it stand, covered, for about an hour. Drain and rinse.
Slow cooking and saving it for later:
- Put the soaked soybeans in a crock pot. Fill it up with enough water so that the beans are covered well.
- Sprinkle a little salt and add a little vegetable oil, if you like.
- Cook on high for 6 to 8 hours or until the beans are tender.
Note: You can save the liquid used for cooking the soybeans and use it as a base for soups. I like to use it to make rice.
In the fridge: The cooked soybeans can be stored with the cooking liquid in the fridge for up to 2 weeks.
In the freezer: You can portion them out into ziplock bags, put them in the freezer, and just take one bag out when you want.
Oven roasting to make soy nuts:
- Dry the soaked soybeans by spreading them out and patting them dry with a paper towel.
- Spray a large cookie sheet with some cooking spray.
- Put the soybeans on the cookie sheet.
- Roast it in the oven at 350 degrees F for about 45 minutes, or until they are lightly browned. Make sure to stir or shake the sheet frequently for even roasting and be careful not to burn them.
Some of the soy nuts got a bit burnt, but they look pretty good. The soy nuts should be stored in airtight containers. You can add salt if you desire. They make such great snacks. You can toss it in your favorite trail mix. You can use it as a topping for your yogurt or ice cream. It goes great sprinkled on top of a salad. Mix it in your tuna salad to add an extra crunch. Add it to baked goods. The list goes on…
