The National Restaurant Association surveyed nearly 1,300 professional chefs – members of the American Culinary Federation – to find out which foods, cuisines, beverages and culinary themes will be hot trends on restaurant menus in 2015.
The culinary forecast identified local sourcing, environmental sustainability, healthful kids’ meals, and natural ingredients/minimally processed foods as top trends on restaurant menus. For alcoholic beverages and cocktails, be on the look out for micro-distilled/artisan spirits, locally produced beer/wine/spirits, onsite barrel-aged drinks, regional signature cocktails, and culinary cocktails.
