With the NYC Marathon coming up on Sunday, November 2nd, Eric Kayser and his team has put together a special menu with the marathon runner in mind, filled with nutrient rich, whole foods. Beginning Monday, October 20th, Maison Kayser cafes will be offering a $30 prix-fixe Marathon Menu, with choice of an appetizer, entree and dessert. The menu items consist of 60% carbohydrate, 15% protein as well as 25% fat, ideal for meeting the nutritional requirements of marathoners.
Menu highlights include an Heirloom Beet and Avocado Salad with Hazelnut Dressing, Warm Leeks with Mustard dressing, Tomatoes and Chives, Roasted Organic Chicken with Sweet Potatoes and Haricots Verts, Roasted Atlantic Salmon with Brown Rice Pilaf and Sautéed Tuscan Kale, Grilled Vegetable and Egg White Frittata with a Tomato Arugula Salad and a Gluten and Dairy Free Banana Almond Cake. A complimentary breadbasket filled with a mix of seasonal, organic, artisan breads is offered with the menu. The menu will be available every day through November 2nd.
Eric Kayser and his team worked with New York Times best selling author and professional sports nutritionist, Cynthia Sass, on the creation of the menu. Cynthia has consulted with many athletes including the New York Rangers. She worked with the Maison Kayser team to create select items that would “provide adequate fuel for endurance as well as nutritional elements needed for healing and repair between runs”.
The baking team has also created Energy Sticks that are available in the bakery department and can be purchased any time for a quick nutritional boost before a run. These are made from rye flour, which is a rich source of magnesium, a mineral needed for over 300 reactions in the body including blood sugar regulation and boosting satiety.
In addition, proceeds from the menu will be donated to both City Harvest and Ronald McDonald House.
