- 2 cups cooked edamame (steamed or boiled)
- 1 cup silken tofu
- 1/2 tsp salt
- 3 tbsp garlic
- 1/4 cup olive oil
- 1/3 cup lemon juice
- 1 1/2 teaspoons cumin
- Place the cooked edamame into a food processor and process finely.
- Add the remaining ingredients and process until smooth.
- If desired, add salt, pepper, and/or lemon juice and adjust to taste.
Edamame soybeans make a great snack on their own. I normally steam them in their pods, sprinkle some salt, and munch away. Now, I found out that edamame also make great hummus spreads. This hummus came out very light and very enjoyable. Adding the silken tofu helped make the mixture creamier while still keeping the flavors calm. This recipe is a great twist from the usual hummus flavors.
