Tapenade is an olive based spread generally made with black olives, capers, and olive oil. There are variations on the recipe. Tapenade is sometimes flavored with garlic, herbs, lemon juice, and/or anchovies. Tapenade is often served as a spread on a baguette of some sort, as a dip, as a spread in sandwiches, as a sauce for meats and vegetables, or as a topping for salad.
I have never tried tapenade before, so I was pretty curious. I do enjoy olives. They do wonders with fish in the oven and also goes great in a martini. I was determined to give this tapenade a try. I did a search for tapenade on a few recipe sites: allrecipes.com, recipezaar.com, and foodnetwork.com and compiled a list of recipes with high ratings and good feedback. I will decide on one give it a try. Stay tuned.
