Recipe: Minimal Paleo Orange Chicken With Cauliflower Rice

Recipe: Minimal Paleo Orange Chicken With Cauliflower Rice

Orange chicken is one of the more popular dishes found in American Chinese restaurants and take out, but I never really knew what is was until more recently. I found out more about this dish when I read about Whole30-complaint and Paleo-friendly versions for this dish. The typical orange chicken found at restaurants usually involves pieces of chicken, covered in batter, fried, and coated with a sweet, orange and chili sauce glaze. The Whole30 complaint and Paleo versions exclude the fried batter and offers a lighter, less sugary orange-chili sauce. Here’s a recipe for a lightly sweet and savory orange...

Minimalist’s Purple Sweet Potato Ice Cream (Dairy-free and Gluten-free)

Minimalist’s Purple Sweet Potato Ice Cream (Dairy-free and Gluten-free)

After reading about the lilac sweet potato soft serve in an Oreo waffle cone available at select McDonald’s in Hong Kong this past summer, we were curious to make a version of our own. Ingredients: 1 ½ lb of purple sweet potato 2 cups reduced fat coconut cream 1 cup almond milk, and 1 1/2 cup almond milk reserved for later ¼ cup maple syrup 2 tsp vanilla extract Trader Joe’s Gluten Free Joe-Joe’s...

Recipe: Baked Fish Cakes with Purple Sweet Potatoes

Recipe: Baked Fish Cakes with Purple Sweet Potatoes

Here’s a recipe for baked fish cakes. The fish cakes are made with minced white fish, lightly seasoned with red curry paste and fresh herbs. I used cod fish here, but tilapia, halibut, or any other whitefish would be fine too. I minced the fish using a food processor. Alternatively, you can purchase finely minced fish at some Asian markets that are convenient for molding fish cakes and fish balls. The fish cake recipe is pretty basic but versatile. A little bit of red curry paste adds a nice aromatic flavor and very light heat. It’s also gluten-free and dairy-free....
