In an earlier post, I attempted to make Thai Pineapple Fried Rice. It came out pretty well the first time and I was impressed. I decided to retry this dish, but this time with a few variations in the ingredients. I will also be using an amazing cast iron wok!
Ingredients:
- Carrots
- Fried tofu
- Vegetarian mock meat
- Celery
- Edamame
- Fresh pineapples
- Fresh white corn

Here I present you Pineapple Fried Rice 2.0. Unfortunately, this time the pineapple boat was not constructed, but I think it still looks great on a regular plate. Cooking it on a wok definitely makes a huge difference. Very very tasty tasty!
