Yam and mixed grain rice patty

I had some leftover mixed grain rice from the day before and decided to turn them into crispy rice patties. This recipe is great for leftover rice – especially fried rice or mixed grains.


The mixed grain rice I used was the Sun Way Yam and Mixed Grain Rice. It comes in a 3.3 lb vacuum sealed bag. It has a mixture of like twelve different grains – brown rice, oats, beans, wheat, millet, etc. and pieces of yam. It can be cooked by itself or can be mixed with white rice.

Ingredients:

  • 1.5 cups of cooked rice, warm or reheated
  • 1 tbsp flour or arrow root powder (can add an egg instead)
  • salt and pepper, to taste

Directions:

  1. In a large bowl, combine the cooked rice, flour, salt and pepper. Mix well.
  2. Form the mixture into about 6 patties.
  3. Preheat the oven to 350 degrees.
  4. Place the patties on a greased cookie sheet (I spray it with PAM).
  5. Bake for about 5 minutes and then flip over and bake for another 5 minutes.
  6. Bake until the patties are slightly crispy brown on top.

If you like, you can cook the patties over the stove top instead:
Heat the some olive oil in a large frying pan. Fry the patties over medium high heat. Cook the patties on each side until lightly golden – couple minutes each side.
