Goji berry jam

I came across a large jar of goji berries in a sealed container in the fridge. They have been sitting there for a few months and still have a significant amount of shelf life remaining. Goji berries can stay fresh for a couple of years when kept in the fridge. They should be stored in a cool dry place, refrigeration is not necessary, but putting it in the fridge can extend its shelf life greatly.

I decided to use take some goji berries and make some jam with it. It would make a great snack with mini crackers or sliced bread.



A little about goji berries
Goji berries, also known as wolfberries, are considered a super healthy fruit. They are high in antioxidants and good for immune system. The goji berry is a mild, tangy fruit. It tastes a little sweet and sour. They are usually found in dried form in health food stores and Asian supermarkets.

There are many things you can do with goji berries. They may be used as snacks or incorporated into beverages or foods. I will list a few:

  • Goji berries can be used to brew in a tea. You can add a handful of goji berries to a cup of hot water and let sit and hydrate for 5 to 10 minutes. You can drink the tea and eat the hydrated berries.
  • Goji berries can be added to smoothies. Soak a handful of goji berries in water for 10 minutes. Once they are plump and juicy, add them to your favorite smoothie.
  • You can also add goji berries to your favorite trail mix.
  • You can add goji berries into your hot or cold cereals, just like any other dried fruit.
  • Mix in some goji berries when making muffins or other baked goods.
  • Goji berries can also be added into soups, like in my watercress soup.

Here’s the recipe for Goji berry jam

Ingredients:

  • 1/2 cup of goji berries, soaked in water for about an hour
  • 1/4 cup of dried prunes
  • 1 tbsp honey
  • 1 tsp ginger powder
  • 2 tbsp of lemon juice

Directions:

  1. Put all ingredients in a blender or food processor.
  2. Blend until pureed.
  3. Store the jam in an airtight container and keep in the fridge for up to 2 weeks.
