Yam and mixed grain rice patty

I had some leftover mixed grain rice from the day before and decided to turn them into crispy rice patties. This recipe is great for leftover rice – especially fried rice or mixed grains.

Goji berry jam

I came across a large jar of goji berries in a sealed container in the fridge. They have been sitting there for a few months and still have a significant amount of shelf life remaining. Goji berries can stay fresh for a couple of years when kept in the fridge. They should be stored in a cool dry place, refrigeration is not necessary, but putting it in the fridge can extend its shelf life greatly.

I decided to use take some goji berries and make some jam with it. It would make a great snack with mini crackers or sliced bread.
