Beef Stew Recipe


Ingredients:

  • 2.7 lbs beef chuck (cubes)
  • salt and pepper
  • olive oil
  • 2 tbsp butter (melted)
  • 2 pearl onions (chopped into eighths)
  • 4 tbsp minced garlic
  • 2 tbsp tomato paste
  • 0.5 lb mushrooms, thinly sliced
  • 3 tbsp flour
  • 1/4 tsp thyme, oregano, and basil
  • 1/8 tsp allspice
  • 2 tsp red wine vinegar, to taste
  • 3 cups beef broth
  • Your choice of vegetables (I used about 4 cups of broccoli, carrots, beans, peas, and baby corn. Potatoes and chopped celery would be a good additions as well.)

Directions:

  1. Season the beef with salt and pepper.
  2. Heat some olive oil in a pan and saute the beef, a couple of minutes on each side. (Will probably have to do it in two batches)
  3. In the slow cooker, add the butter, onions, garlic, tomato paste, mushrooms, flour, spices, and the cooked beef. Also add the beef broth and roughly around 6-7 cups of water.
  4. Let it cook on high for an hour.
  5. Stir the stew and add in the vegetables.
  6. Slow cook for 8+ hours on low. Add the red wine vinegar to taste.

This stew came out really well. I served it over some white rice. I was afraid that the beef looked a little dry, but it was actually very tender. Diced potatoes would have been a nice addition to the stew. This would be great for the snowy winter days!

Making beef stew in a slow cooker is a long journey. I managed to take a few snapshots last night after filling up the pot with the many ingredients. I think I went a little overboard with the ingredients and the pot was filled to the top. I also threw in some fresh parsley to add some flavor and awesome aroma.

I let the beef stew slow cook overnight, for about 8 hours. When I woke up this morning, I hurried to the kitchen to check up on it. As I opened the lid, the smell of delightful beef stew burst from the pot. I was pretty amazed. I gave it a stir as I watched in excitement. I grab a soup spoon and gave it a taste. It was my first time making a beef stew, but this was not bad at all. In fact, it was very flavorful. Adding all those ingredients was a pretty awesome idea.



I haven’t had the chance to sit down and seriously enjoy my beef stew yet. But from how it looks, I think the stew would be perfect for a chilly evening. I plan on serving it over some white rice (since I don’t have brown rice in the pantry).

It has been pretty busy for me lately, so it definitely feels great to be able to spend some time cooking in the kitchen this evening. I went to the grocery store earlier and stocked up on some ingredients, like beef, vegetables, broth, herbs, etc. My plan was to make beef stew with the slow cooker! Since I’m still quite busy for this coming week, the slow cooker was perfect! All I needed was to spend a little time preparing the ingredients. Then, throw all the ingredients into the pot and let it do its magic! The beef and vegetables are stewing as I’m typing right now!
