Baked potatoes with stuffing and broccoli

Here’s a relatively quick and simple dinner idea consisting of a couple of potatoes, bag of broccoli and a box of chicken stuffing.

Potatoes were simple. Heat oven to 350 degrees. After giving the potatoes a good wash under cold water, we dried them with paper towels. Next, we make some slits in the potato for the moisture to come out while baking. Finally, we placed the potatoes on the oven, middle rack, and wait. Baking time was about an hour or so.
I really like the way they sell packages of frozen broccoli in microwaveable steam bags now. (Check out Bird’s Eye Steamfresh Fresh Frozen Vegetables) It’s very convenient for times when you’re just too busy to wash and chop up fresh broccoli. Of course, fresh vegetables are the best, but when the vegetable drawer in the fridge is empty and there’s no time to visit the grocery store, frozen is the only alternative. These frozen vegetables are pretty “fresh” I guess. There’s no chemicals or anything listed. The ingredients list just simply states “Broccoli.”

Anyway…
Bag of broccoli + microwave + 5 minutes = Hot steamed broccoli.

For the stuffing, we used a box of Stove Top Stuffing Mix, the chicken one. To accompany the stuffing, we poured over some mushroom gravy.

Preparation time: 10-15 minutes max.
Cooking time: 60-70 minutes.

And you get: Baked potatoes with stuffing and broccoli!
